Hey y’all, have you ever had eggs so good, that they would pass for a full meal?! Well this recipe is just that. Forget your everyday fried or scrambled egg, this recipe will re-define breakfast and take it to a whole other level.

  1. 3 eggs
  2. 4 Spicy Beef/Pork sausages
  3. 1 onion
  4. 1 clove garlic
  5. 3 tomatoes
  6. 3 tablespoons tomato paste
  7. Oregano
  8. Dhania/ spring onions to garnish
  9. Salt
  10. Black pepper
  11. Paprika
  12. Vegetable oil
  1. Start of by cooking the sausages and set aside once they're done.
  2. Follow by peeling and chopping onion and garlic clove into small cubes.
  3. Heat a pan and add three tablespoons oil plus the chopped onion and garlic to start cooking on medium low heat.
  4. When the onions begin to become translucent, wash and grate in the tomatoes and mix well.
  5. Follow by adding the tomato paste,a hint of oregano, salt and pepper.
  6. Allow to cook for 2-4 minutes for the sauce to thicken.
  7. Once sauce is thick, make room for the eggs by making three small holes in the sauce.
  8. Follow by cracking an egg in a cup and then adding one to each space on the pan (By cracking the eggs directly in the pan, there is a higher chance of the shell dropping in the sauce and you do not want crunchy eggs)
  9. After a few minutes, add the cooked (&sliced) sausage in the spaces left.
  10. Lastly leave the eggs to cook to your liking at low heat without turning or mixing.
  1. Serve with toast and garnish with fresh dhania or chopped spring onions.
